Our Thanksgiving for the Turkeys culinary expert.

With extraordinary experience and expertise in naturopathy and holistic nutrition, Chef Kieffer has redefined the kitchen as a place of true healing. Under the culinary tutelage of his Grandmother Falzarrano, his wonderful mother and father, and his prestigious degree from the renowned Culinary Institute of America (CIA), Kieffer has taken his extensive knowledge of health and nutrition from the tables of New York’s most esteemed restaurants, to the world headquarters of Google and Microsoft, and even into the intimate dining room of Forbes mega moguls.

PARSNIP AND POTATO PUREE

Ingredients
1 Lb. Parsnip Peeled & Roughly Chopped
1/2 Lb. Skin On Yukon Potato Roughly Chopped
1 Tbs. Fresh Sage Chopped
4 Cloves of Garlic
2 Tbs. Olive Oil
Salt + Pepper to Taste
Roasted Pine Nuts for Garnish

Cooking Directions

Submerge parsnip and potatoes in water and bring to a boil. Once at boil, drop to a simmer until fork tender

A few minutes before parsnips and potatoes are tender, add sage, garlic clove and olive oil.

Transfer parsnips, potato, garlic and sage into food processor. Incorporate reserved water while processing until consistency is smooth.

Garnish with pine nuts and fresh sage

Ziggy and Star Turkeys

In 2016, Pasado’s Safe Haven received a call from a military family who raised turkeys as pets and were no longer able to care for them. The fate of the small family of turkeys was uncertain. Pasado’s Safe Haven rescued them, happy to give the turkeys, including Ziggy and Star, a safe and happy home at the sanctuary.

Not all turkeys are so lucky, which is why we are choosing to honor them with a heartfelt plant-based feast. Learn more about how most turkeys are treated in our food system: TURKEYS USED FOR FOOD
